Meet Krystal Dvorak

Krystal Dvorak is May's featured mom on Modmomsclub.

Tell us about yourself.

I am a 24 year old stay-at-home mom. I was born and raised in Chicago, Illinois where I worked in event planning and public relations before my husband and I moved to Modesto last June. My husband Anthony is the Area Sales Manager for Winpak and he sells flexible packaging solutions in the food service industry. We have one ten month old daughter, Koren.

What's your favorite family place?

We love going to the park. We pack a lunch, some toys, bubbles and a blanket. We'll watch the other kids play or go on the slides and swings. Plus, its a great way to get in a free workout.

What's your favorite place for yourself?

My bath tub, bubble bath, and a  good book.  I love just relaxing and escaping into another place or time.  Having some "me time" every once in a while really  rejuvenates you as a mom.

What's your favorite ritual with your kids?

 I love bath time with Koren.  She just loves the water and recently learned how to splash which means that I end up leaving the bathroom all wet.  This is Koren's favorite time of day (she's like me in this way); just add a rubber duck and some bubbles and watch her go!

What did you eat for dinner last night?  

I made a vegetarian lasagna with garlic bread and a mixed green salad. Koren loved it!

Can you share the recipe? 

Its so easy and really healthy!

INGREDIENTS

  • 1 (16 ounce) can diced tomatoes
  • 1 (16 ounce) package instant lasagna noodles
  • 1 bunch fresh spinach, washed and chopped
  • 2 large carrots, shredded
  • 2 large zucchini, diced
  • 2 summer squash, diced
  • 1 large eggplant, diced
  • 1 large head broccoli, cut into florets
  • 2 teaspoons dried oregano
  • salt and pepper to taste
  • 1 cup shredded mozzarella cheese (optional)
  • 1 cup ricotta cheese (optional)
  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease one 9x13 inch baking dish.
  2. Place a layer of tomatoes in the bottom of the baking dish, followed by a layer of noodles, spinach, carrots, zucchini, summer squash, eggplant and broccoli. Season to taste with oregano, salt and pepper. Repeat layering of ingredients until all are used up. If using cheeses sprinkle over broccoli layers and on top of dish.
  3. Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes.

I really like Taylor Swift's new CD, Lady Gaga and The Corrs.

What is your favorite TV show? 

I love the Millionaire's Club on Bravo. It makes me laugh and grateful that I have such a wonderful husband. I also love Dancing With The Stars and anything on HGTV.
