Meet Roos & Leslie Antonis
This month, I'm shaking things up a bit by profiling a mom AND dad. Roos and Leslie Antonis are members of ShadowChase Running Club and are very active parents at Enslen Elementary school in Modesto. In fact, Roos is the current PTC president.
Modmomsclub: Tell us about yourselves.
Roos Antonis: I am a paramedic working for AMR in Alameda County. I am the Parent
Teacher Club president at my son's school. I enjoy walking, including 5k and half marathons.
Leslie Antonis: I am a trauma nurse for a local hospital. I have been a nurse for almost 20 years. I enjoy reading, knitting and running. I like to run marathons and ultra marathons of 31 miles and more. We enjoy incorporating our vacations with running events. In 2008, we completed all of the "Rock n Roll" events which allowed us to travel to Phoenix, Nashville, San Diego, San Antonio and Virginia Beach.
MMC: What's your favorite family place?
RA/LA: We like to travel to Hawaii. We try to make it an annual event.
MMC: What's your favorite place for yourself?
RA: Walking on the Virginia Corridor trail
LA: Running. I prefer the trails but anywhere will do.
MCC: What's your favorite family ritual?
RA: We have "Friday Night Movie Night" We pick a movie and watch it at home with popcorn.
LA: When the boys were little, I would read to them daily. Now that they can read, we like to have DEAR (drop everything and read) time before bed.
We also walk our dogs twice a day, rain or shine. We try to do it as a family, but it's not always possible during school but one of us will go. It's healthy for everyone!
MMC: What did you eat for dinner last night?
RA/LA: We had Crunch Tilapia, baked potatos, sauteed zucchini and mushrooms.
MMC: Can you share the recipe?
RA/LA:
Crunch Tilapia:
3/4 cup panko bread crumbs
1/4 cup chopped parsley
1 large egg, lightly beaten
1 tbsp milk
1 lb. tilapia fillets, halved
3/4 tps salt
2 tbsp canola oil (I used PAM for less fat)
1. Combine the panko and parsley on a dinner plate.
2. Mix egg and milk in a bowl.
3. Working one at a time, dip the fish fillets in the egg & milk mixture and shake off excess; dredge lightly in the crumb mixture. Sprinkle with salt.
4. Heat oil in a large nonstick skillet over medium heat. Add the fillets and cook until golden brown on one side, about 4 minutes. Turn, and cook until fish is no longer translucent int he center, about 4 more minutees. Serve immediately, or keep warm in a 200 degree oven.
MMC: What’s on your iPod?
RA/LA: We both have a wide variety of music. We have everything from country, hip hop, techno, classic rock, alternative and some golden oldies.
MMC: What is your favorite TV show?
RA/LA: We both like to watch CSI. We like all of the CSI's (Miami, NY and Crime scene). Roos really enjoys watching reality TV. I prefer to not watch TV and knit instead.
